摘  要:自动化设备在餐饮服务行业的应用已成为行业发展的一个重要方向,这不仅是因为自动化设备能够极大地提升生产效率,更因为它在保障食品安全、保证出品质量稳定以及降低运营成本等多方面都展现出无可比拟的优势。本文对深圳市食品经营单位利用自动化设备从事餐饮服务活动的情况进行调研,根据所使用设备的自动化程度将其分为三种模式,探索其中存在的食品安全风险,分析目前国内相关标准现状,对标准化建设进行思考并提出建议对策,以期为后续餐饮服务领域自动化设备发展研究和标准体系建设提供参考信息。The application of automated equipment in the catering service industry has become an important direction,because the automated equipment can not only greatly improve the production efficiency,but also exhibit incomparable advantages in ensuring food safety,maintaining stable food quality and lowering operating costs.Through the investigation of the situation of automated equipment usage in the catering service activities of food business units in Shenzhen,this paper divides the equipment into three categories according to the automation level of the equipment,explores the existing food safety risks,analyzes the current status of relevant domestic standards,reflects on standardization construction,and proposes corresponding suggestions and countermeasures.It is expected to provide reference information for the follow-up development and research and the standards system construction of the automated equipment in the field of catering service.
