摘 要:现行的食品检测标准中,用直接滴定法(通常称斐林试剂法)测定食品中总糖含量时,不同食品指定的检测方法标准各不相同,不同标准中滴定用的斐林试剂配方也不尽相同;这些形式各样的检验标准,虽然看起来颇为复杂,实则检测基本原理一样,实验步骤也大同小异。鉴于此,本文试图研究用统一的方法来进行各类食品中总糖含量的测定。试验结果表明,采用本文的方法可以很好地测定各类食品中的总糖含量,结果准确可靠(除含量偏低样品外,相对偏差<1%),为统一直接滴定法测总糖含量的标准提供了强有力的支撑。In the current food testing standards,the direct titration method(commonly known as the Fehling reagent method)is used to determine the total sugar content in food.Different foods have different designated testing method standard numbers,and the Fehling reagent formula used for titration in different standards is also different.These various forms of testing standards may seem quite complex,but in fact,their basic principles of detection are the same,and the experimental steps are also similar.In view of this,this article attempts to study the determination of total sugar content in various foods using a unified method.The experimental results show that the method proposed in this article can effectively determine the total sugar content in various foods,and the results are accurate and reliable(except for samples with low content,the relative deviation is lower than 1%),which provides strong support for the standardization of direct titration method for measuring total sugar content.
