摘　　要：灵芝的营养价值极高,富含多糖、三萜类化合物、甾醇和生物碱等多种活性成分。近年来,灵芝在功能性食品方面的开发日益广泛。本文概述灵芝的活性成分及其营养价值,总结我国灵芝深加工食品的研究现状,分析目前其在加工生产中存在的问题,并提出今后的发展方向,以期为灵芝深加工食品产业的发展提供参考。Ganoderma lucidum has high nutritional value,rich in polysaccharides,triterpenoids,sterols and alkaloids and other active ingredients.In recent years,Ganoderma lucidum has been widely developed in functional foods.This paper summarized the active ingredients and nutritional value of Ganoderma lucidum,summarized the research status of Ganoderma lucidum deep-processed food in China,analyzed the existing problems in processing and production,and proposed the future development direction,in order to provide reference for the development of Ganoderma lucidum deep-processed food industry.
