摘 要:“食品工厂设计实习”是食品专业重要的工程设计类实践课程。以“食品工厂设计实习”为例,探索在新工科背景下基于OBE理念的食品专业实践教学模式的改革,构建了“一中心、双导师、三阶段”的实践教学新模式。具体是以学生工程能力培养为中心,基于校企合作双导师,开展“项目设计—项目实施—项目运行”三阶段的项目式实践教学,将食品专业人才的工程能力培养目标及毕业要求融入实践教学全过程。实践表明,该模式的实施提高了实践课程教学质量,有利于培养学生创新设计能力与工程应用能力。“Food Factory Design Practice”is an important practical course of engineering design for the food specialty.In this investigation,the reform of practical teaching mode of food specialty based on the concept of OBE under the background of new engineering was explored,and the practical teaching mode of“one center,dual-mentor system,and three stages”was constructed by taking“Food Factory Design Practice”course as an example.This mode was realized by taking the engineering ability cultivation of students as the center,and innovating the project-based practical teaching of“project design—project implementation—project operation”in three stages based on university-enterprise cooperation and dual-mentor system,so as to integrate the engineering ability training objectives and graduation requirements of food specialty into the whole process of practical teaching.Teaching practice showed that the implementation of this mode could improve the teaching quality of practical courses,cultivate the students’ability of innovation,design and engineering.
