摘 要:为开发出具有金银花抗炎功效的新产品,本研究以金银花、无花果、菊花、百合、枸杞、桑叶、陈皮、青果、薄荷为主要原料,开发了一款具有抗炎功效的金银花固体饮料。通过单因素实验和正交实验对金银花固体饮料的填充剂、甜味剂、酸味剂添加量进行优化,确定其配方。结果表明,金银花抗炎固体饮料的最佳配方为填充剂(赤藓糖醇)添加量45%、甜味剂(三氯蔗糖)添加量0.06%、酸味剂(DL-苹果酸)添加量0.075%,此时产品感官评分为96.9分,具有较好的流动性和溶解性,对以脂多糖(LPS)激活的RAW264.7细胞具有较好的抗炎活性,为金银花产品功效提供理论基础,有助于金银花的开发和利用。In order to develop a new product with anti-inflammatory effect of honeysuckle,this study developed a solid beverage with anti-inflammatory effect using honeysuckle,fig,chrysanthemum,lily,wolfberry,mulberry leaf,orange peel,green fruit and mint as the main raw materials.Through single factor experiment and orthogonal experiment,the content of filler,sweetener and acid in honeysuckle solid beverage was optimized,and its formula was determined.The results showed that the optimal formula of honeysuckle anti-inflammatory solid drink was 45% filler(erythritol),0.06% sweetener(sucralose)and 0.075% sour agent(DL-malic acid).The sensory score was 96.9.The produced product had good fluidity and solubility,and had good anti-inflammatory activity to lipopolysaccharide(LPS)activated RAW 264.7 cells,which provided a theoretical basis for the efficacy of honeysuckle products,and was conducive to the development and utilization of honeysuckle industry.
