储藏温度对进口大豆储存损耗和品质的影响研究

摘  要:温度对进口大豆的储藏品质指标影响较大,以美国和巴西进口大豆为研究对象,设置室温和35℃两个温度条件,在储藏过程中定期取样测定大豆的储存损耗、质量指标和品质指标,研究储藏温度对大豆损耗及储藏品质的影响。实验结果表明:高温储藏会使大豆的粗脂肪酸值、过氧化值等指标有不同程度的上升,储存损耗增加,对脂肪含量影响不大。在相同储藏条件下,巴西大豆的损耗高于美国大豆,且巴西大豆储存损耗对储藏温度的变化更加敏感。Temperature has a great influence on the storage quality of imported soybeans.In this paper,the impor⁃ted soybeans from the United States and Brazil were selected as the research objects.Two temperature conditions were set at room temperature and 35℃,and the storage loss,quality index and quality index of soybeans were measured by regular sampling during storage,so as to clarify the influence of storage temperature on soybean loss and storage quality.The results showed that high temperature storage increased the crude fatty acid value and per⁃oxide value of soybean,and the storage loss increased,but had little effect on the fat content.Under the same stor⁃age conditions,the loss of Brazilian soybeans is higher than that of U.S.soybeans,and the storage loss of Brazilian soybeans is more sensitive to the change of storage temperature.
