摘  要:[目的]乳酸菌对促进人体健康具有重要意义。作为良好载体,发酵乳和活菌型乳酸菌饮料是人体补充乳酸菌的重要来源。我国国家标准明确规定发酵乳、活菌型乳酸菌饮料中乳酸菌数量,对保证检测结果准确有重要意义。[方法]选择常见实验室培养基作为干扰成分,通过人为添加,探究各干扰成分对乳酸菌培养基、国标法检测结果的影响。[结果]双歧杆菌总数受孟加拉红培养基、BS培养基影响最大,VRBA培养基影响最小。嗜热链球菌总数受TTB培养基影响最大,VRBA培养基影响最弱。乳杆菌总数受SC培养基影响最大,受VRBA培养基、XLD培养基影响最小。MRS琼脂培养基感官受SC培养基成分影响最大,改良MRS琼脂培养基受SC培养基影响最大,MC琼脂培养基主要受高添加量BS培养基影响。[结论]本试验结果为通过培养基、菌落感官及菌落数量变化判断乳酸菌培养状态提供依据,为乳酸菌检测结果异常分析提供参考,对保证乳酸菌检测结果准确有一定的指导意义。[Objective]Lactic acid bacteria are of great significance in promoting human health.As good carriers,fermented milk and live lactic acid bacteria beverage are important sources of lactobacillus supplementation for human body.The national standards clearly specifies the quantity of lactic acid bacteria in fermented milk and live probiotic beverages,so it is important to ensure the accuracy of detection results.[Method]Common laboratory medium are selected as the interference components,and the effects of various interfering components on lactic acid bacteria culture media and national standard test results are explored through artificial addition.[Result]The total number of bifidobacterium is the most affected by rose Bengal medium and BS medium,and the least affected by VRBA medium.The total number of Streptococcus thermophilus is the most affected by TTB medium and the least affected by VRBA medium.The total number of Lactobacillus is most affected by SC medium,VRBA medium and XLD medium have the least effect on Lactobacillus.MRS AGAR medium is most affected by SC medium composition,modified MRS AGAR medium is most affected by SC medium,MC AGAR medium is mainly affected by high supplemental BS medium.[Conclusion]The results provided a basis for judging the culture status of lactic acid bacteria through the medium,colony sense and colony number changes,and provided a reference for the abnormal analysis of lactic acid bacteria detection results,and have certain guiding significance for ensuring the accuracy of lactic acid bacteria detection results.
