摘 要:目的:分析研究贵州省黔南、遵义、黔东南、铜仁4个地区绿茶中Mg、K、Ca、Mn、Fe、Zn、Ni、Se、Mo、Cu和Sr共11种矿物元素含量的特征及其浸出特点。方法:将茶叶粉碎后利用微波消解法进行前处理,再用电感耦合等离子体质谱仪对消解液中目的元素进行检测。结果:黔南、遵义、黔东南、铜仁绿茶中目的矿物元素含量存在差异,但含量特征相似。除黔南地区铁含量高于镍外,基本服从K>Ca>Mg>Mn>Ni>Fe>Zn>Cu>Sr>Se>Mo。在1 h内11种矿物元素浸出率与浸泡时间成正相关,但浸出率与各矿物元素含量没有明显的关联,各地区茶叶K、Mg、Zn、Mn、Cu、Se浸出率均超过10%,Ca、Fe浸出率均低于1%。结论:贵州省黔南、遵义、黔东南、铜仁4个地区绿茶矿物元素含量虽然有所差异,但含量特征高度类似。茶叶中各元素浸出率与含量无关,与时间成正相关。Objective:To analyze the content characteristics and the leaching characteristics of 11 mineral elements including Mg,K,Ca,Mn,Fe,Zn,Ni,Se,Mo,Cu,and Sr in green tea from Qiannan,Zunyi,Qiandongnan,and Tongren in Guizhou province.Method:The tea was crushed and pretreated by microwave digestion method,and then the content of target elements in the digest was detected by inductively coupled plasma mass spectrometer.Result:The content of the target mineral elements in green tea from the four places,namely,Qiannan,Zunyi,Qiandongnan,and Tongren,was different,but the content characteristics were highly similar.Except that the iron content in Qiannan area was higher than that of nickel,they basically obeyed the following order:K>Ca>Mg>Mn>Ni>Fe>Zn>Cu>Sr>Se>Mo.Within one hour,the leaching rate of 11 mineral elements was positively correlated with the soaking time,but there was no obvious correlation between the leaching rate and the content of each mineral element.In teas from various regions,the leaching rates of K,Mg,Zn,Mn,Cu,and Se all exceeded 10%,while those of Ca and Fe were both below 1%.Conclusion:Although there was some difference in the content of mineral elements in green tea from Qiannan,Zunyi,Qiandongnan,and Tongren in Guizhou province,the content characteristics were highly similar.The leaching rate of each element in tea was independent of the content and positively correlated with time.
