摘  要:“食品分析与检测”实验课程是济南大学烹饪与营养教育专业的一门专业基础课,对于增强学生的实验技能与专业知识至关重要。本文以课程中的常规实验“油脂酸价的测定”为例,分别从实验内容和案例导入两方面开展课程思政的实践教学,将家国情怀、责任和担当等思政元素自然融于理论与实践教学中,在提高学生专业水平的同时,实现价值引领、知识教育和能力培养的有机融合,以期为“食品分析与检测”实验课程提供新的教学视角与实践路径,也为其他实验课程的思政教育融合提供理论依据与实践范例。The experimental course of Food Analysis and Testing is a basic course of cuisine and nutrition education major of University of Jinan,which is very important to enhance students’experimental skills and professional knowledge.Taking the conventional experimental determination of acid value of oils in food analysis and testing course as an example,carry out ideological and political practice teaching of the course from the two aspects of experimental content and case introduction respectively,and naturally integrate ideological and political elements such as feelings of family and country,responsibility and accountability into theoretical and practical teaching,so as to achieve the organic integration of value guidance,knowledge education and ability cultivation while improving students’professional level.This study is expected to provide a new teaching perspective and practice path for the experimental course of“Food Analysis and testing”,and also provide a theoretical basis and practical example for the integration of ideological and political education in other experimental courses.
