摘  要:为改善普鲁兰多糖-可溶性大豆多糖膜的柔韧性和热封性能,提高其应用潜力,本文研究了四种增塑剂(聚乙二醇、丙二醇、甘油和山梨醇)对普鲁兰多糖-可溶性大豆多糖膜物理性能、结构和应用效果的影响。与未添加增塑剂的普鲁兰多糖-可溶性大豆多糖膜相比,添加增塑剂膜的厚度增加、亮度降低、水分含量和断裂伸长率显著升高(P<0.05)。丙二醇膜、甘油膜和山梨醇膜表面光滑,结构均匀致密;聚乙二醇膜表面粗糙呈多孔结构,透光率和热封强度显著降低(P<0.05);丙二醇膜水接触角降低、透光率、溶解时间和热封强度无明显变化;甘油膜和山梨醇膜的断裂伸长率显著高于其他膜(P<0.05),水接触角和溶解时间显著降低(P<0.05),热封强度显著升高(P<0.05)。肽粉包装应用效果表明,甘油膜的热封形态和速溶效果最佳。综上,甘油膜溶解性好(溶解时间<30 s),柔韧性高(断裂伸长率高),且热封强度显著高于其他膜(2.58 N/15 mm)(P<0.05),具有作为热封速溶膜的应用潜力。In order to improve the flexibility and heat-sealing performance of pullulan-soluble soybean polysaccharide film and its application potential,the effects of four plasticizers(polyethylene glycol,propylene glycol,glycerol and sorbitol)on the physical properties,structure and application effect of pullulan-soluble soybean polysaccharide film were studied in this article.Compared to the pullulan-soluble soybean polysaccharide film without plasticizer,the film with plasticizer showed increase in thickness,moisture content and elongation at break,and decrease in brightness(P<0.05).The propylene glycol,glycerol,and sorbitol films had smooth surfaces and uniform,compact structures.The polyethylene glycol film had a rough surface and porous structure,with a significant decrease in light transmittance and heat-sealing strength(P<0.05).The propylene glycol film showed a decrease in water contact angle,but no significant changes in light transmittance,dissolution time,and heat-sealing strength were observed.The glycerol and sorbitol films showed a higher elongation at break than other films,with a significantly decrease in water contact angle and dissolution time(P<0.05)and a significantly increase in heat-sealing strength(P<0.05).The results of the peptide powder packaging application indicated that the glycerol film showed the best heat-sealing form and instant effect.In summary,glycerol film exhibits good solubility(dissolution time<30 s),high flexibility(high elongation at break),and significant higher heat-sealing strength(2.58 N/15 mm)(P<0.05)compared to other films,and has potential applications as a heat-sealing instant film.
