摘 要:采用渗透汽化膜对清香型白酒进行渗透汽化实验,并用气相色谱法对过膜液中微量化合物进行定性和定量分析。结果表明,渗透汽化膜能有效分离清香型白酒中的微量化合物,醇类、酯类物质主要集中于渗透一段FQ-1、渗透二段FQ-2,酸类物质,尤其乙酸,主要集中于渗余液FQ-3,该渗透汽化膜能有效富集高级醇,集中于渗透一段FQ-1、渗透二段FQ-2;结合感官品评,渗透一段FQ-1以乙酸乙酯为主体香,花香、果香突出,余味净爽、无杂感,渗透二段FQ-2略带花香、果香,余味较爽净,渗余液FQ-3中以乙酸为主体香,酸香突出,较为酸涩。可根据不同阶段酒体特点进行酒体设计,对新产品研发及酒体设计具有重要研究意义。Pervaporation membrane was used for the pervaporation experiment of Qingxiang Baijiu,and the trace compounds in the pervapored liquid were qualitatively and quantitatively analyzed by gas chromatography.The results showed that the pervaporation membrane could effectively separate the trace compounds from Qingxiang Baijiu;alcohols and esters mainly concentrated in the first stage liquid FQ-1 and the second stage liquid FQ-2;acids,especially acetic acid,mainly concentrated in the leachate FQ-3;the pervaporation membrane could effectively enrich higher alcohols,which concentrated in the first stage liquid FQ-1 and the second stage liquid FQ-2.Sensory evaluation showed that the first stage liquid FQ-1 was dominated by the aroma of ethyl acetate,with prominent flower aroma and fruit aroma,and the aftertaste was clean;the second stage liquid FQ-2 had slight flower aroma and fruit aroma,with refreshing aftertaste;the leachate FQ-3 was dominated by the aroma of acetic acid,and the sour aroma was prominent.Therefore,liquor body design can be carried out according to the characteristics of the liquor of different stages.This study has important research significance for new product development and liquor body design.
