摘　　要：采用大曲防护菌剂防治中温大曲害虫,根据曲块进库、出库前后重量损失率、理化指标及感官评价验证其曲虫防治的效果。结果表明,试验组相较于对照组的曲块重量损失率降低7.8%;理化结果及感官评价表明,在大曲贮存期间曲虫对大曲质量影响显著,理化品质明显降低,有明显异杂味,试验组受曲虫影响很小,大曲防护菌剂效果显著。In this study,Angel protective agent was used to control the pests in Daqu,and the control effect was evaluated according to the weight loss,physicochemical indexes and sensory quality of the Daqu before and after storage.The results showed that,the average weight loss rate of the experimental group was reduced by 7.8%compared with the control group.Physicochemical analysis and sensory evaluation indicated that the influence of pests on the quality of Daqu of the control group was significant,the physicochemical quality decreased obviously and the unpleasant flavor was obvious.On the other hand,the experimental group was influenced by the pests slightly,indicating that the Daqu protective agent had remarkable effect.
