摘 要:近年来,消费者对食品品质与安全问题日渐关注,代谢组学在动物源食品分析中的研究为食品安全和消费者权益保护提供了一种有力的手段。代谢组学作为解决食品造假问题的前沿技术手段,被广泛用于食品成分和品质分析,其在食品分析中具有许多优势,如高通量、高灵敏度和多样性分析等,可以有效克服传统方法的局限性。该文总结代谢组学分析技术在食品感官特性鉴定、分析食品加工和储藏过程中物质变化、食品鉴伪、检测外源性有害物质、食品溯源、新鲜度评估等食品品质和安全领域的应用,旨在为代谢组学在食品领域中的开发与研究提供借鉴。In recent years,consumers have become increasingly concerned about food quality and safety,and metabolomics serves as a powerful tool in the research on animal-derived food for ensuring food safety and pro-tecting consumers.Metabolomics as a cutting-edge technology that can help to solve the problem of food coun-terfeiting,was widely used in the analysis of food ingredients and quality.It demonstrated high throughput,high sensitivity,and diversity analysis in food analysis,overcoming the limitations of conventional methods.The application of metabolomics in the fields of food quality and safety,including sensory characterization,analysis of material changes in food processing and storage,identification of food counterfeiting,detection of ex-otic harmful substances,food traceability,and freshness assessment was summarized,with a view to provide ref-erence for the application of metabolomics in the development and research of food products.
