摘  要:食用菌中富含多糖、三萜、甾醇、多酚等多种次级代谢产物,该类物质的提取为食用菌资源的深度利用拓展了方向。合成生物学、代谢工程及微生物组学等前沿技术的飞速发展,使得微生物发酵在食用菌提取物生产中的应用重要性日益凸显。在食用菌生物活性物质提取过程中引入微生物发酵工艺,不仅可改善提取物的生物利用度,还可有效提高目标产物产量。综述近年来微生物发酵在食用菌提取物生产中的应用研究进展,探讨微生物发酵在食用菌提取物生产中的作用机制、发酵食用菌提取物的种类及生物活性成分的生理功效、食用菌提取物的市场应用现状,并展望其未来发展趋势,以期实现对食用菌提取物的全面认知,并为未来食用菌资源挖掘及其提取物生产提供理论支持和实践参考。Edible mushrooms are rich in polysaccharides,triterpenes,sterols,polyphenols and other secondary metabolites,and the extraction of this class of substances expands the direction for the deep utilization of edible mushroom resources.The rapid development of cutting-edge technologies such as synthetic biology,metabolic engineering and microbiomics has led to the increasing importance of the application of microbial fermentation in the production of edible mushroom extracts.The introduction of microbial fermentation process in the extraction of bioactives from edible mushrooms not only improves the bioavailability of extracts,but also effectively increases the yield of target products.The purpose of this paper was to summarize the progress of research on the application of microbial fermentation in the production of edible mushroom extracts in recent years,to discuss the mechanism of microbial fermentation in the production of edible mushroom extracts,the types of fermented edible mushroom extracts and the physiological efficacy of the bioactive components,the current status of the market application of edible mushroom extracts and to look forward to the development trend in the future.In order to facilitate the comprehensive knowledge of edible mushroom extracts and to provide theoretical support and practical reference for the future excavation of edible mushroom resources and their extract production.
