摘 要:为了探究女贞子多糖的抗氧化抑菌特性及其作用机理、拓宽女贞子的开发应用渠道,采用超声辅助有机溶剂法提取女贞子多糖。通过研究女贞子多糖对·OH、O_(2)^(-)·、ABTS^(+)·的清除能力和铁还原力,探究女贞子多糖的抗氧化特性。结果表明,超声辅助有机溶剂法提取女贞子多糖的最佳条件是超声功率320 W、超声时间60 min、料液比1∶30(g/mL),此时女贞子多糖的提取率最高,为4.23%。女贞子多糖具有较好的抗氧化活性,其对·OH、O_(2)^(-)·和ABTS^(+)·均具有清除作用和铁还原作用。当多糖质量浓度为2.8 mg/mL时,其对·OH的清除率为54.65%。当多糖质量浓度为4.0 mg/mL时,其对O_(2)^(-)·和ABTS^(+)·的清除率分别为17.69%和90.59%。In order to explore the antioxidative and bacteriostatic properties of Ligustrum lucidum polysaccharide and its action mechanism,the development and application channels of Ligustrum lucidum were expanded.The ultrasonic assisted organic solvent method was used to extract Ligustrum lucidum polysaccharide.The antioxidant properties of Ligustrum lucidum polysaccharide were investigated by studying its scavenging capacity and iron reduction capacity to·OH,O_(2)^(-),ABTS^(+)·.The results showed that the optimal extraction conditions were as follows:when the ultrasonic power was 320 W,the ultrasonic time was 60 min,and the ratio of solid to liquid was 1∶30(g/mL),the extraction rate of Ligustrum lucidum polysaccharide was 4.23%.The polysaccharide of Ligustrum lucidum had good antioxidant activity,and it could clear·OH,O_(2)^(-)·and ABTS^(+)·and reduce iron.When the mass concentration of polysaccharide was 2.8 mg/mL,the clearance rate of·OH was 54.65%.When the mass concentration of polysaccharide was 4.0 mg/mL,the clearance rate of O_(2)^(-)·and ABTS^(+)·was 17.69%and 90.59%,respectively.
