摘　　要：三氯丙醇酯(3MCPDEs)是近年来婴幼儿配方乳粉中高度关注的化学污染物之一。3MNPDEs在肠道中受到脂肪酶的影响,能够转化为三氯丙醇。这些转化后的物质能进一步穿透血-睾屏障和血脑屏障,在体内各种体液中广泛分布。通过3-MCPDE在食品中的主要来源,3-MCPD及其脂肪酸酯的毒性研究,食品中三氯丙醇酯的污染水平现状以及婴幼儿配方奶粉中氯丙醇酯检测研究进展进行综合分析和阐述。Trichloropropanols(3MCPDEs)have been one of the highly concerned chemical pollutants in infant formula milk powder in recent years.3MNPDEs are affected by lipase in the intestine,and can be converted into trichloropropanol.These transformed substances can further penetrate that the blood test is barrier and blood-brain barrier,and are widely distributed in various body fluids.This study comprehensively analyzes and elaborates on the main sources of 3-MCPDE in food,the toxicity of 3-MCPD and its fatty acid esters,the current level of contamination of trichloropropanol esters in food,and the research progress in detecting trichloropropanol esters in infant formula milk powder.
