赣南地区农产品硒含量及硒形态特征分析

摘　　要：富硒农产品已成为人们补硒的重要方式之一,为调查赣南地区农产品的硒含量及硒形态特征分布,测定7类农产品的硒含量及3类农产品中5种硒形态含量。结果表明:不同种类的农产品其硒含量有较大差异,表现为茶叶>鲜蛋>畜禽>水产>大米>蔬菜>水果,富硒农产品如大米、茶叶、蛋类、畜禽和水产等农产品可作为补硒的优选农产品。不同农产品中硒形态的存在形式不同,大米和茶叶主要以SeMet和SeCys2形态存在,Se(Ⅳ)和Se(Ⅵ)形态含量较低,不含MeSeCys。大米和茶叶的有机硒占总硒比例分别为95.3%和92.1%。羽衣甘蓝则以SeMet,SeCys2和Me Se Cys形态存在,其中有机硒占比为79.4%。可见,赣南地区的农产品特别是大米和茶叶的硒在人体内生物可利用度高,富硒农产品分布较广。Selenium-rich agricultural products have become one of the important ways for people to supplement selenium.In order to investigate the selenium content and distribution of selenium species in agricultural products in southern Jiangxi area,the selenium content of seven types of agricultural products and the five selenium species of three types of agricultural products was determined.The results showed that there were significant differences in selenium content among different types of agricultural products,with tea>fresh eggs>livestock and poultry>aquatic products>rice>vegetables>fruits.Selenium-rich agricultural products such as rice,tea,eggs,livestock and poultry,and aquatic products could be used as preferred agricultural products for selenium supplementation.The species of selenium in different agricultural products were different.Rice and tea were mainly existed as SeMet and SeCys2,with low levels of Se(Ⅳ)and Se(Ⅵ),and no MeSeCys.The proportion of organic selenium in rice and tea to total selenium was 95.3%and 92.1%,respectively.Kale existed in the form of SeMet,SeCys2 and MeSeCys,with organic selenium accounting for 79.4%.It can be seen that the selenium in agricultural products,especially rice and tea,in southern Jiangxi has high bioavailability in human body,and selenium-rich agricultural products are widely distributed.
