摘 要:白酒中的酚类化合物对白酒的风味塑造及其潜在的健康活性起着至关重要的作用。白酒中的酚类化合物包括黄酮、酚酸和单宁等,源自酿酒原料本身及其在酿造过程中经历的微生物代谢和化学反应,不仅为白酒带来了独特的风味,还具有抗氧化、抗炎和抗菌等多种生物活性,可对人体健康产生积极影响。通过应用现代仪器分析结合代谢组学技术,研究人员已能够识别多种白酒中的酚类化合物、追踪它们的代谢路径,并了解它们在发酵过程中的变化,为深入理解白酒复杂的化学构成提供了重要信息。本文进一步探讨了白酒中酚类化合物的健康功效,尤其是4-甲基愈创木酚和4-乙基愈创木酚的抗氧化和抗炎特性,以及香兰素、丁香酚、阿魏酸和麝香草酚等化合物的生物活性。这些研究结果为白酒可能具有的健康功效提供了坚实的科学支撑。Phenolic compounds in baijiu play an important role in the flavor formation of baijiu and its potential health benefits.Polyphenolic compounds in baijiu,including flavonoids,phenolic acids and tannins,originate from the raw materials themselves and the microbial metabolism and chemical reactions experienced in the brewing process.These compounds not only bring unique flavor to baijiu,but also have a variety of biological activities such as antioxidant,anti-inflammatory and antibacterial,which have a positive impact on human health.By applying modern instrument analysis combined with metabolomics technoloy been able to identify the types of phenolic compounds in baijiu,track their metabolic pathways,and understand their changes in the fermentation process,which provides important information for in-depth understanding of the complex chemical composition of baijiu.This paper further explored the health benefits of phenolic compounds in baijiu,especially the antioxidant and anti-inflammatory properties of 4-methylguaiacol and 4-ethylguaiacol,and the biological activities of compounds such as vanillin,eugenol,ferulic acid,and thymol.These results provide a solid scientific support for the possible health effects of baijiu.
