摘 要:食品及农产品中有害物质的检测直接关系到公共健康和食品安全。随着全球农业生产方式的多样化与工业化,农药残留、重金属、真菌毒素等有害物质的监控变得十分关键。本文综述当前食品及农产品中有害物质的主要检测技术,重点分析了免疫分析技术、光谱分析技术、生物传感器技术及色谱技术的应用优势。同时,详细讨论各种技术的原理与检测流程,全面评估了这些技术在实际检测中的有效性与局限性,旨在为未来食品安全检测技术的发展提供参考和指导。The detection of harmful substances in food and agricultural products is directly related to public health and food safety.With the diversification and industrialization of agricultural production methods around the world,the monitoring of harmful substances such as pesticide residues,heavy metals,and mycotoxins has become very critical.This article reviews the main detection technologies for harmful substances in food and agricultural products,focusing on the application advantages of immunoassay technology,spectral analysis technology,biosensor technology,and chromatography technology.At the same time,the principles and detection processes of various technologies are discussed in detail,and the effectiveness and limitations of these technologies in actual detection are comprehensively evaluated,aiming to provide reference and guidance for the development of future food safety detection technology.
