摘 要:食品安全问题与国民身体健康、生命安全和社会经济等有着直接联系。鉴于食品微生物污染是食品安全当前面临的主要挑战之一,发展高效的食品微生物检测技术对于保障食品安全至关重要。为此,文章综述了电子鼻技术在典型食品微生物检测中的研究进展,重点分析了电子鼻的检测性能特点,并将其与传统微生物检测方法进行了比较。总体来看,电子鼻技术具有检测速度快、灵敏度高、操作简便、无损等优势,有望成为保障食品安全的有力支撑。Food safety issues are closely tied to the national physical health,life safety,and social economy.Based on microbial contamination of food is one of the major challenges in food safety,developing efficient food microbial detection techniques is crucial for ensuring food safety.The article reviews the research progress of electronic nose technology in detecting typical food microbial detection,focuses on analyzing the performance characteristics of electronic noses and compares them with traditional microbial detection methods.Overall,electronic nose technology has advantages such as rapid detection,high sensitivity,ease of operation,and non-destructive testing,which is expected to become a powerful support for ensuring food safety.
