祥云地区非遗文化产品食用土碱品质研究

摘  要:以祥云地区5个不同批次土碱样品为研究对象,对土碱中碳酸钠和碳酸氢钠、营养元素、重金属元素等指标进行检测分析。结果显示,5个不同批次土碱样品中的碳酸钠和碳酸氢钠总含量最高可达36.7%,是发挥作用的主要成分;土碱样品中含有7种主要营养元素,具有一定的营养价值,特别是每人每日经土碱摄入的铁元素含量为16.074 mg·d^(-1),满足男性推荐摄入量需求;而重金属砷元素平均含量为2.5 mg·kg^(-1),超过标准限量要求,但各重金属经土碱每人每日摄入量均未超过日允许摄入量,在合理范围内食用相对安全。Five different batches of soil alkali samples from Xiangyun area were used as research objects to detect and analyze indicators such as sodium carbonate and sodium bicarbonate,nutritional elements,and heavy metal elements in soil alkali.The results showed that the total content of sodium carbonate and sodium bicarbonate in 5 different batches of soil alkali samples could reach up to 36.7%,which were the main components that played a role;the soil alkali samples contain seven major nutrient elements and have certain nutritional value.In particular,the daily intake of iron through soil alkali is 16.074 mg·d^(-1),which meets the recommended intake requirements for men;the average content of heavy metal arsenic element is 2.5 mg·kg^(-1),exceeding the standard limit requirement.However,the daily intake of each heavy metal by soil alkali did not exceed the daily allowable intake,and it is relatively safe to consume within a reasonable range.
