摘  要:以41株乳酸菌作为研究对象,以γ-氨基丁酸(γ-Aminobutyric acid,GABA)和血管紧张素转换酶(Angiotensin converting enzyme,ACE)抑制活性为主要指标筛选获得具有降压功能的益生菌株,并分析其活菌数、pH值、滴定酸度以及耐酸性、耐胆盐能力等特性。结果表明,从41株乳酸菌中筛选出4株GABA含量高且ACE抑制率高的菌株,分别为干酪乳酪杆菌K8和SLK30、美洲虎乳酪杆菌K44、植物乳植物杆菌E44。4株菌株活菌数均大于10~6 CFU/mL,4株菌株凝乳pH值范围在4.54~4.69之间,酸度均在82?T以上。在模拟胃酸环境中,当pH值在2.0~3.0范围内时,4株乳酸菌的存活率均大于65%;当胆盐浓度在0~1.0%范围内时,均具有较好的耐受性,它们的存活率与胆盐浓度呈负相关。In this study,41 strains of lactic acid bacteria were selected as the research objects,and the inhibitory activities ofγ-aminobutyric acid(GABA)and angiotensin converting enzyme(ACE)were used as the main indicators to screen and obtain probiotics with the function of lowering blood pressure.The fermentation characteristics such as the number of viable bacteria,pH value,titratable acidity,as well as the probiotic characteristics such as acid resistance,bile salt resistance were also analyzed.The results showed that four strains with high GABA content and high ACE inhibition were screened out from 41Lactobacillus strains,namely Lacticaseibacillus casei K8 and SLK30,Lacticaseibacillus pantheris K44,and Lactiplantibacillus plantarum E44.The viable bacterial counts of the four strains were all greater than 10~6 CFU/mL,and the curd pH of the four strains ranged from 4.54 to 4.69,the acidity was above 82?T.In the simulated gastric acid environment,the survival rate of all four strains of lactic acid bacteria was greater than 65%when the pH was in the range of 2.0 to 3.0.All of them were well tolerated when the bile salt concentration was in the range of 0 to 1.0%,and their survival rates were negatively correlated with the bile salt concentration.
