摘  要:食品安全是一个全球性的人类健康问题。食品中的残留药物、病原体、重金属和新鲜度等问题对人类生命健康构成重大威胁。构建能够在复杂食品基质中进行高选择性分析的传感器,为保证食品安全提供强有力支持。柔性传感水凝胶具有高灵敏度、可拉伸性、良好的生物相容性、优异的力学稳定性、自修复能力、低成本、易于加工等特点,已被广泛应用于食品安全与监测领域。文章系统地总结了柔性传感水凝胶的工作原理及其根据外界刺激的响应方式分类,重点概述了柔性传感水凝胶在食品安全与监测中的应用现状及研究进展。文章旨在为柔性传感水凝胶的优化、应用拓展和工业化提供参考。Food safety is a global human health issue.Residual drugs,pathogens,heavy metals and freshness issues in food pose a major threat to human life and health.The construction of sensors capable of highly selective analysis in complex food matrices provides strong support for ensuring food safety.Flexible sensing hydrogels,characterized by high sensitivity,stretchability,good biocompatibility,good mechanical stability,self-healing ability,low cost and easy processing,have been widely used in food safety and monitoring.This paper systematically summarizes the working principle of flexible sensing hydrogels and their classification according to response mode of external stimuli,and focus on outlining the status and research progress of the application of sensing hydrogels in food safety and monitoring.The aim of this paper is to provide a reference for the optimization,extended application and industrialization of flexible hydrogel sensors.
