摘 要:以母乳、牛乳和山羊乳为研究对象,采用高效液相色谱-质谱联用技术分析不同结合态唾液酸组成,模拟婴儿胃肠消化过程研究脂质、蛋白质和低聚糖结合态唾液酸的消化特性,对比分析3种乳中不同结合态唾液酸消化率。结果表明:母乳中的唾液酸主要是低聚糖结合态N-乙酰神经氨酸(N-acetylneuraminic acid,Neu5Ac),含量为734.65μg/mL,消化率最高为6.13%;牛乳和山羊乳中的唾液酸主要与蛋白质结合,但其消化率较低,分别仅为0.24%~1.53%和0.08%~0.70%。母乳、牛乳和山羊乳中的脂质结合唾液酸的消化率均较高,最高分别为19.78%、38.07%和4.60%,但由于3种乳中的脂质结合态唾液酸含量很少,因此经消化后解离下来的游离唾液酸很少。总体上,母乳、牛乳和山羊乳中的3种结合态唾液酸经消化后解离下来的游离唾液酸均较少。High performance liquid chromatography and mass spectrometry were employed to analyze the composition of bound sialic acids in human,bovine,and goat milk.Then,the gastrointestinal digestion process of infants was simulated to study the digestive characteristics of lipid-bound,protein-bound,and oligosaccharide-bound sialic acids,and the digestibility of different bound sialic acids in the three kinds of milk was compared.The sialic acids in human milk were mainly oligosaccharide-bound N-acetylneuraminic acid(Neu5Ac),with the content of 734.65μg/mL and the highest digestibility of 6.13%.The sialic acids in bovine and goat milk were mainly bound to protein,while their digestibility was low,only 0.24%-1.53%and 0.08%-0.70%,respectively.The digestibility of lipid-bound sialic acids in human,bovine,and goat milk was high,peaking at 19.78%,38.07%,and 4.60%,respectively.However,due to the low content of lipid-bound sialic acids in the three kinds of milk,there were few free sialic acids dissociated after digestion.In general,there were only small amounts of free sialic acids dissociated from bound sialic acids in human,bovine and goat milk after digestion.
