摘  要:近年来,食用油掺假问题已成为社会关注的热点,对消费者的健康和市场秩序构成威胁,加强食用油掺伪检测具有重要意义。本文综述了食用油掺伪检测的常用方法,包括色谱检测法、光谱检测法和电子鼻检测法,并比较了其优缺点。在此基础上,提出多技术联用及发展快速检测技术和非靶向检测技术的建议,以期为食用油质量监管提供科学依据和技术支持。In recent years,the problem of edible oil adulteration has become a hot topic of social concern,which poses a threat to the health of consumers and the market order.It is of great significance to strengthen the detection of edible oil adulteration.This paper summarizes the common methods for adulteration detection of edible oil,including chromatographic detection,spectroscopic detection and electronic nose detection.At the same time,the advantages and disadvantages of these methods are compared,and the future development directions such as multi-technology combination,rapid detection technology development,non-targeted detection technology application and standardization and standardization are proposed,aiming to provide scientific basis and technical support for the quality supervision of edible oil.
