摘 要:以残次红枣为研究对象,检测了其中的生物活性成分和营养成分,以及矿物元素、霉菌、重金属评价了残次红枣的饲料特性和饲用价值。结果表明,残次红枣中不饱和脂肪酸含量丰富,包括棕榈酸、油酸、亚油酸、花生酸等,其中油酸含量最高达0.0774%;残次红枣中有机酸含量高,主要为苹果酸、柠檬酸、琥珀酸,含量分别为4803.81、4119.21、6140.87 mg/kg,总多酚含量1.86%,总糖含量为22.8%;残次红枣粗蛋白含量4.74%、粗脂肪含量3.03%、粗纤维含量4.56%、钙含量0.32%、磷含量0.23%、粗灰分含量2.30%;残次红枣中天门冬氨酸和脯氨酸含量最高,分别为0.42%和0.75%;残次红枣中钙、铁和硒含量分别为1.67×10^(3)、56.70、1.18 mg/kg;残次红枣的霉菌和重金属含量均在安全范围内。Some bioactive components and nutritional ingredients of residual jujube fruit were detected,as well as mineral element、mycetes、heavy metals contents.The feed characteristics and the nutritional value of residual jujube fruit were evaluated.Results show:The content of unsaturated fatty acids in residual jujube is rich,including palmitic acid,oleic acid,linoleic acid,arachidonic acid,etc.The oleic acid content is 0.0774%;Malic acid,citric acid and succinic acid were the main organic acids,which were 4803.81 mg/kg,4119.21 mg/kg and 6140.87 mg/kg,respectively.The total polyphenol content was 1.86%and total sugar content was 22.8%;Crude protein、crude fat、crude fiber、calcium、phosphorus、crude ash content were 4.74%、3.03%、4.56%、0.32%、0.23%、2.30%respectively;The content of aspartic acid and proline were 0.42%and 0.75%;The contents of Ca,Fe and Se were 1.67×103 mg/kg、56.70 mg/kg and 1.18 mg/kg respectively;Mycetes、heavy metals contents of the residual jujube were within the safe range.
