活性炭对浓香型原酒除杂催陈效果的研究

摘  要:利用活性炭对浓香型原酒除杂催陈,探讨活性炭孔径、粒度、添加量、处理时间对浓香型原酒品质的影响,并对活性炭除杂催陈工艺条件进行优化。结果表明,当活性炭平均孔径为4.63 nm时,在活性炭粒度为45~75μm、添加量为2 g/L、处理时间为36 h的组合条件下,原酒品质提升效果明显,且在后续5个月的贮存过程中,质量保持稳定,未出现返生现象,感官评价接近自然陈化1年原酒。Using activated carbon to remove impurities and accelerate the aging of Nongxiang crude liquor,the effect of the pore size,particle size,addition amount,and processing time of activated carbon on the quality of Nongxiang crude liquor were explored,and the process conditions of activated carbon treatment were optimized.The results showed that when the average pore size of the activated carbon was 4.63 nm,the particle size of the activated carbon was between 45μm and 75μm,the addition amount was 2 g/L,and the processing time was 36 hours,the quality of the crude liquor was significantly improved.The quality of the crude liquor remained stable during the subsequent 5 months of storage,and its sensory quality was close to the crude liquor naturally aged for 1 year.
