摘 要:【目的】为了解不同产地烤烟Amadori化合物构成特点,并验证基于Amadori构成特征进行烤烟产地判别的可行性。【方法】采用HPLC-MS/MS测定烤烟中11种Amadori化合物,结合Fisher判别分析等分析方法,研究不同产地烤烟中Amadori化合物组分构成和含量分布特征;通过卷烟加香试验和香韵特色评价,验证了6种代表性Amadori化合物的风味贡献作用特征。【结果】不同产地烟叶中含量优势Amadori化合物种类构成相同,但含量存在显著差异,且各Amadori化合物的优势产地不同。Fru-Pro、Fru-Ala和Fru-Asn占Amadori总量的80%左右,四川烟叶中Amadori化合物总量最高,陕西、湖南和安徽烟叶中Amadori化合物含量较低。4种代表性Amadori化合物(Fru-Pro、Fru-Glu、Fru-Gly和Fru-Asn)可增加卷烟香韵丰富度、细腻感和柔和度,降低枯焦气、刺激性和干燥感。Fru-Pro、Fru-Phe、Fru-Asn、Fru-Glu分别在果甜、花香、烘焙香和焦香香韵具有积极贡献作用。基于Amadori化合物分布特征的多元统计分析可实现不同产地烤烟烟叶的有效区分;Amadori化合物与香型风格呈现较好的关联性,具有蜜甜香、清甜香和清甜蜜甜特征的贵州、四川、福建产地烟叶的Amadori化合物分布特征相似,具有醇甜香特征的湖南、陕西、江西、安徽烟叶具有相似的Amadori化合物,而具有蜜甜焦香风格的山东烟叶中Amadori化合物构成独具特色。【结论】本研究能为卷烟产品叶组配方以及基于Amadori化合物累积调控的烤烟香型风格彰显提升研究提供重要数据参考。【Objective】To understand the compositional characteristics of Amadori compounds in fluecured tobacco from different regions and to verify the feasibility of discriminating the origin of flue-cured tobacco based on the compositional characteristics of Amadori.【Method】Eleven Amadori compounds in fluecured tobacco were determined by HPLC-MS/MS,and the compositional and content distribution charac⁃teristics of Amadori compounds in flue-cured tobacco from different regions were investigated by Fisher dis⁃criminant analysis.The flavor contribution characteristics of 6 representative Amadori compounds were verified by the cigarette flavor experiment and evaluation of flavor characteristics.【Result】The composi⁃tion of Amadori compounds in tobacco leaves from different origins was the same,but the content of Ama⁃dori compounds was significantly different,and the origin of Amadori compounds was different.Flu-pro,FLU-ALA and FLU-ASN accounted for about 80%of the total Amadori,and the total amount of Amadori compounds in Sichuan tobacco leaves was the highest,while the content of Amadori compounds in Shaanxi,Hunan and Anhui tobacco leaves was low.Four representative Amadori compounds(Fru-Pro,Fru-Glu,Fru-Gly and Fru-Asn)increase the richness,fineness and smoothness of cigarette flavor and reduce the sen⁃sation of char,irritation and dryness.Fru-Pro,Fru-Phe,Fru-Asn and Fru-Glu contributed positively to the sweet,floral,baked and burnt fruit flavors,respectively.Multivariate statistical analysis based on the distri⁃bution characteristics of Amadori compounds can effectively distinguish flue-cured tobacco leaves of differ⁃ent origins.Amadori compounds showed a good correlation with flavor style.The distribution characteris⁃tics of Amadori compounds in tobacco leaves from Guizhou,Sichuan and Fujian provinces were similar,and those in tobacco leaves from Hunan,Shaanxi,Jiangxi and Anhui provinces were similar to Amadori com⁃pounds.The composition of Amadori compound in Shandong sweet and burnt flavor t
