摘  要:目的:为了系统评估地稍瓜果实的营养价值。方法:对地稍瓜果皮与果肉中的粗蛋白质、粗脂肪、总糖、总酸及总酚含量进行测定,对其氨基酸营养价值及脂肪酸组成进行分析。结果:地稍瓜果肉的粗蛋白质含量(157.91 g·kg^(-1))、粗脂肪含量(15.61%)、总糖含量(36.83 mg·g^(-1))、总酸含量(3.08 mg·g^(-1))及总酚含量(21.86 mg·g^(-1)),均高于果皮。地稍瓜的果皮与果肉中均含有17种氨基酸,果肉的氨基酸总量(30.55 mg·g^(-1))明显高于果皮(7.94 mg·g^(-1));果皮中有2种氨基酸的氨基酸比值系数小于1,果肉中3种氨基酸的氨基酸比值系数小于1;果皮氨基酸比值系数分为63.88,果肉氨基酸比值系数分为59.94。地稍瓜果皮和果肉中均检测出17种脂肪酸,包括9种饱和脂肪酸(Saturated Fatty Acid,SFA)、4种单不饱和脂肪酸(Monounsaturated Fatty Acid,MUFA)和4种多不饱和脂肪酸(Polyunsaturated Fatty Acid,PUFA),其中果肉中PUFA含量占比38.27%,果皮中PUFA含量占比7.53%。结论:地稍瓜的果肉和果皮均富含多种营养成分,果肉在蛋白质、氨基酸及脂肪酸方面表现出更为优越的特性,具备良好的食用价值与营养潜力。Objective:To systematically evaluate the nutritional value of the fruit of Cynanchum thesiodes(Freyn)K.Schum..Method:The crude protein,crude fat,total sugar,total acid,and total phenol content in the skin and flesh of Cynanchum thesiodes(Freyn)K.Schum.were determined,and its amino acid nutritional value and fatty acid composition were analyzed.Result:The crude protein content(157.91 g·kg^(-1)),crude fat content(15.61%),total sugar content(36.83 mg·g^(-1)),total acid content(3.08 mg·g^(-1)),and total phenol content(21.86 mg·g^(-1))of the fruit flesh of Cynanchum thesiodes(Freyn)K.Schum.were all higher than those of the fruit skin.The skin and flesh of the sweet potato contain 17 types of amino acids,and the total amount of amino acids in the flesh(30.55 mg·g^(-1))is significantly higher than that in the skin(7.94 mg·g^(-1));the amino acid ratio coefficient of two amino acids in the peel is less than 1,and the amino acid ratio coefficient of three amino acids in the flesh is less than 1;the amino acid ratio coefficient of the fruit peel is 63.88,and the amino acid ratio coefficient of the fruit flesh is 59.94.17 types of fatty acids were detected in both the skin and flesh of Cynanchum thesiodes(Freyn)K.Schum.,including 9 saturated fatty acids(SFA),4 monounsaturated fatty acids(MUFA),and 4 polyunsaturated fatty acids(PUFA).Among them,the proportion of PUFA content in the flesh is 38.27%,and the proportion of PUFA content in the peel is 7.53%.Conclusion:The flesh and peel of Cynanchum thesiodes(Freyn)K.Schum.are rich in various nutrients,and the flesh exhibits superior characteristics in protein,amino acids,and fatty acids,possessing good edible value and nutritional potential.
