摘  要:目的:了解和评估山东省枣庄市市售食品(包括少量网购食品)中食源性致病菌的污染情况,以降低食品安全风险。方法:分批次采集2022—2024年枣庄市市售食品样品17类共732份,依据《山东省食品污染物和有害因素风险监测工作手册》检测食品中的致病菌。结果:在732份样品中,共检测出含致病菌样品158份,总检出率为21.58%。其中,烘烤及油炸类食品致病菌检出率最高(37.50%),其次为水产品(33.91%)和调味品(31.25%)。致病菌中霍乱弧菌的检出率最高(42.50%),其次为克罗诺杆菌(28.92%)和蜡样芽胞杆菌(19.68%)。散装食品致病菌检出率(24.16%)高于预包装食品(15.86%)。结论:枣庄地区市售食品存在不同程度的食源性致病菌污染,特别是焙烤及油炸类食品、水产品和调味品的污染情况较为严重,建议相关部门加强对这些食品类别的市场监督管理,以保障公众健康。Objective:To understand and evaluate the contamination of foodborne pathogens in commercially available food(including a small amount of online shopping food)in Zaozhuang city,Shandong province,in order to reduce food safety risks.Method:732 samples of 17 categories of commercially available food in Zaozhuang city from 2022 to 2024 were collected in batches,and pathogenic bacteria in the food were detected according to the Shandong Province Food Contaminants and Harmful Factors Risk Monitoring Work Manual.Result:Among 732 samples,a total of 158 samples containing pathogenic bacteria were detected,with a total detection rate of 21.58%.Among them,the detection rate of pathogenic bacteria in baked and fried foods was the highest(37.50%),followed by aquatic products(33.91%)and seasonings(31.25%).The detection rate of Vibrio cholerae was the highest(42.50%),followed by Cronobacter(28.92%)and Bacillus cereus(19.68%).The detection rate of pathogen in bulk food(24.16%)was higher than that in pre-packaged food(15.86%).Conclusion:There are varying degrees of foodborne pathogen contamination in the food sold in Zaozhuang area,especially in baked and fried foods,aquatic products,and seasonings.It is recommended that relevant departments strengthen market supervision and management of these food categories to ensure public health.
