摘 要:目的:分析国内外食用花卉资源现状,并对产业发展前景进行展望。方法:从中国知网、维普网、万方数据、Web of Science等数据库检索相关文献,梳理总结食用花卉相关的内容。结果:分析了国内外食用花卉历史及发展现状、食用花卉的营养、保健及药用作用,从加工原料、食品原料、花卉蔬菜三个方面介绍了食用花卉与营养健康产业应用现状,对我国食用花卉资源的种类、特点进行了梳理,最后对我国食用花卉助力营养健康产业开发前景进行了展望。结论:食用花卉有着悠久的发展历史,含有丰富的营养物质,具有良好的营养、保健和药用作用,未来在技术创新、政策支持、智能化生产的支持下,在改善生活和健康水平方面发挥巨大的作用。【Objective】To summarize the domestic and international edible flower resources and prospected their development.【Method】Retrieve relevant literature from databases such as CNKI,VIP,Wanfang Data,Web of Science,etc.,and summarize the content related to edible flowers.【Result】The history and development status of edible flowers at home and abroad,as well as the nutrition,health and medicinal effects of edible flowers,were analyzed.The application status of edible flowers and the nutrition and health industry was introduced from three aspects:processing materials,food materials,and flowers and vegetables.The types and characteristics of edible flower resources in China were sorted out,and finally,the prospects for the development of edible flowers to promote nutrition and health in China were discussed.【Conclusion】Edible flowers have a long history of development,rich in nutrients,and have good nutritional,health,and medicinal effects.In the future,with the support of technological innovation,policy support,and intelligent production,they will play a huge role in improving living and health levels.
