我国预制食品标准中营养特性指标应用的比较分析

摘  要:目的:预制菜等预制食品产业作为食品工业新兴产业发展迅速,但标准相对滞后,需要不断建立建全标准体系。预制食品标准制定需要设定营养特性指标,引导预制食品产业向营养化发展,提高居民的营养健康水平。方法:分析我国已有的预制菜肴和预制主食的国家标准、行业标准、地方标准和团体标准中营养特性指标设立情况。结果:我国目前部分预制食品中设立了一些营养特性指标,指标总体设立尚不普及。结论:介绍我国预制菜肴和预制主食不同标准中营养特性指标设定和应用情况,并提出相关建议,旨在为建立健全我国预制食品标准体系和制定相关标准提供科学依据。【Objective】As a new industry of food industry,prefabricated food industry has developed rapidly,but the standard is relatively backward,so it is necessary to establish a complete standard system.It is necessary to set up nutrition characteristic index in the formulation of prefabricated food standard to guide the development of prefabricated food industry to nutrition and improve the nutrition and health level of residents.【Method】To analyze the establishment of nutritional characteristics indexes in national standard,trade standard,local standard and group standard of precooked dishes and precooked staple foods in our country.【Result】At present,some nutritional indexes have been set up in some prefabricated foods in our country,but they are not universal.【Conclusion】This paper mainly introduced the setting and application of nutritional characteristics indexes in different standards of precooked dishes and precooked staple foods in China,and put forward some relevant suggestions to establish and perfect prefabricated food standard system and provide technical basis for formulating relevant standards in China.
