摘　　要：以鸡内金、麦芽、山楂等药食同源产品为原料,通过单因素试验及正交试验设计,对鸡内金复合保健饮料的配方及杀菌工艺条件等进行研究,筛选出最优配方为鸡内金浸提液100 g,山楂汁100 g,麦汁600 g (以1 000 g成品计),最优杀菌公式为温度110℃,时间20 min。Taking medicinal food homologous products such as endothelium corneum gigeriae galli,malt,and hawthorn as raw materials,the formula and sterilization process conditions of endothelium corneum gigeriae galli compound health drinks were studied through one-factor testing and orthogonal test design.The optimal formula was determined as follows:endothelium corneum gigeriae galli extract 100 g,hawthorn juice 100 g,and malt extract 600 g(in terms of 1000 g of finished product).The optimal sterilization formula was:temperature 110℃,time 20 min.
