摘 要:农产品贮运过程的新鲜度感知是产业关注热点。为满足农产品贮运过程中对新鲜度监测的产业需求,采用微流体纳米气喷纺丝技术创制了负载紫草素的纳米纤维基聚己内酯比色传感薄膜,并通过多尺度手段系统表征了纳米纤维膜的微观结构和理化特性,然后通过体外抑菌试验探究纳米纤维膜抑菌活性,以新鲜猪肉和鱼肉为研究对象探究了纳米纤维膜作为农产品新鲜度监测包装材料的可行性。结果表明,紫草素对不同pH值存在不同颜色响应,且能够均匀分布于纳米纤维中。负载紫草素的纳米纤维平均直径和热稳定性有所增加,但对拉伸性能无显著影响。紫草素/聚己内酯纳米纤维膜(SKN/PCL)对金黄色葡萄球菌具有良好的抑菌活性,且随着贮藏期间猪肉和鱼肉腐败程度的增加展现出从红粉色转变为蓝紫色的颜色变化。研究结果为农产品新鲜度感知/抑菌双功能包装材料研发提供了新的思路和产品支撑。Freshness sensing during the storage and transportation of agricultural products is a hot topic.To meet the industrial demand for freshness monitoring of agricultural products during storage and transportation,a nanofiberbased polycaprolactone colorimetric sensing film loaded with shikonin was created by microfluidic-blow-spinning tech⁃nology in this study.The microstructure and physicochemical properties of the nanofiber films were systematically characterized by multiscale means.Then,based on the study of the antibacterial activity of nanofiber films by in vitro bacterial inhibition test,the feasibility of nanofiber films as packaging material for freshness monitoring of agricultural products was investigated using fresh pork and fish.The results showed that shikonin exhibited distinct color responses to different pH levels.The shikonin was uniformly distributed within the nanofibers,and its loading increased the average diameter and thermal stability of the nanofibers,but had no significant effect on their tensile properties.The SKN/PCL nanofiber films had good antibacterial activity against Staphylococcus aureus and exhibited a pinkish-red to blue-purple color change for pork and fish spoilage during storage.The results can provide new ideas and product support for the preparation of dual-functional packaging materials for freshness sensing and bacterial inhi⁃bition of agricultural products.
