摘　　要：食品化学是食品科学与工程专业的重要核心课程之一,蕴含着丰富的思政教育元素,将思政教育融入食品化学教学全过程,对培养德才兼备的食品类专业人才十分重要。本文以食品化学课程中的美拉德反应为例,从挖掘课程育人元素、优化课程教学设计、全过程融入思政元素等方面进行了分析、探讨和实践,有助于实现价值引领、知识教育、能力培养的有机统一,为大思政背景下食品化学课程教学改革提供思路。Food Chemistry is one of the important core courses for the major of Food Science and Engineering,which contains a lot of ideological and political education elements.It is important to integrate these ideological and political education elements through the whole teaching process for develop talents in food area with both integrity and competence.Taken Maillard reaction in Food Chemistry as an example,examine,deliberate and put into practice the methods of identifying these elements,refining the teaching strategy,and integrating them into the whole process.This can bring together the cultivation of ability,knowledge education and value guiding.Moreover,it can provide suggestions for how the Food Chemistry course might be changed within the framework of"Ideological and Political Education".
