摘  要:以羟丙基甲基纤维素(hydroxypropyl methylcellulose,HPMC)为成膜基质,添加对CO_(2)有吸附作用的木质素磺酸钠(sodium ligninsulfonate,Ls),构建对果实具有气调保鲜作用的可食性涂膜。研究考察Ls添加量(分别为HPMC干质量的3%、6%和9%)对复合膜结构与气体透过性等性能的影响,以及对果实的呼吸调控作用与保鲜效果。结果表明,Ls与HPMC具有良好的相容性,可同时提高复合膜的强度和韧性。复合膜对CO_(2)和O_(2)的阻隔性均随Ls添加量的增加而提高,当Ls添加量为9%时,其对两种气体的阻隔性均可提高50%以上。将复合涂膜用于沙糖橘保鲜时,果实内部自发形成了高CO_(2)、低O_(2)的气体氛围,从而降低了果实的呼吸强度。当Ls添加量为6%时,复合涂膜果实的呼吸速率相较未处理的CK组降低了32.5%,果实的质量损失率和腐烂率分别降低了11.0%和48.2%。同时,复合涂膜组果实较好保持了硬度以及果肉的可滴定酸、可溶性固形物和抗坏血酸含量,因此具有最佳的保鲜效果。综上,HPMC/Ls复合涂膜具有可调控的气体透过性,可通过对果实的呼吸进行适当抑制达到气调保鲜的效果,具有简便易行且环境友好等优点,在果实保鲜领域具有良好的应用潜力。This study employed a mixture of hydroxypropyl methylcellulose(HPMC)as the film-forming matrix and sodium ligninsulfonate(Ls)as the CO_(2)sorbent to fabricate an edible film for modified atmosphere packaging of fruits.The effect of Ls content(3%,6%,and 9%of HPMC in dry mass)on the film’s structure and gas permeability as well as on the respiration regulation and quality preservation of Shatang mandarin was investigated.The results demonstrated that Ls was compatible with HPMC and concurrently enhanced the strength and toughness of the composite film.Its CO_(2)and O_(2)barrier properties increased with Ls addition,both increasing by over 50%at 9%Ls addition.A high CO_(2)and low O_(2)atmosphere was formed inside Shatang mandarin wrapped with the composite film,reducing the respiration rate of fruit.The composite film with 6%Ls decreased the respiration rate,mass loss,and decay incidence by 32.5%,11.0%and 48.2%compared with the untreated control group,respectively.Additionally,the composite film maintained the fruit hardness and the contents of soluble solids,titratable acid,and vitamin C in the fruit flesh,indicating the best quality preservation.In conclusion,the HPMC/Ls composite film possesses controllable gas permeability and enables controlled atmosphere preservation through appropriate inhibition of fruit respiration.It offers advantages such as simplicity,ease of use and environmental friendliness,and holds great potential for application in fruit preservation.
