摘　　要：近年来,由于花色苷具有特殊化学性质,使得大量学者在花色苷基智能包装膜的功能性质以及食品新鲜度监测和保鲜中展开了研究。花色苷是黄酮类化合物,具有良好的抗氧化性和抗菌性。特殊的化学性质使其颜色根据环境酸碱度的变化做出相应的改变。使用花色苷基智能包装膜不仅可以有效延长食品的保质期、监测食品的新鲜度,并且花色苷也是一种功能性添加剂,可以改善包装薄膜的物理和功能特性。本文对花色苷基智能包装膜进行综述,先通过论述花色苷的化学性质来说明其变色原理,再从花色苷的来源差异、提取方式以及花色苷基智能包装膜成膜基质的选择进行论述,对花色苷基智能包装膜的构建进行了梳理,最后总结了花色苷基智能包装膜在食品保鲜中的应用,以期为花色苷基智能包装膜的未来研究和新产品开发提供理论依据。In recent years,due to the special chemical properties of anthocyanins,a large number of scholars have researched the functional properties of anthocyanins intelligent packaging films,as well as food freshness monitoring and preservation.Anthocyanins are flavonoids that have good antioxidant and antibacterial properties due to.Special chemical properties make it possible to change its color according to changes in environmental pH.The use of anthocyanin intelligent packaging film can not only effectively extend the shelf life of food and monitor the freshness of food,but anthocyanin is also a functional additive that can improve the physical and functional characteristics of the packaging film.In this paper,the anthocyanin intelligent packaging film is reviewed.First,the chemical properties of anthocyanins are discussed to explain the principle of color change,then the source differences of anthocyanin,extraction methods,and the selection of film forming matrix of anthocyanin intelligent packaging film are discussed,and the construction of anthocyanin intelligent packaging film is sorted out.Finally,the application of anthocyanin intelligent packaging film in food preservation is summarized.To provide a theoretical basis for future research and new product development of anthocyanins intelligent packaging film.
