迷迭香在食品添加剂中的应用研究进展

摘　　要：迷迭香(Rosmarinus offieinalis L)唇形科植物,化学成分丰富,在医药行业应用广泛,具有抗炎、抗菌、抗肿瘤、抗病毒等生物活性,是一种食药同源的天然宝贵资源。此外,迷迭香是一种天然的食品添加剂,可用于抗氧剂、保鲜剂、防腐剂等来使用,其中脂溶性提取物中鼠尾草酸和鼠尾草酚的抗氧化活性好。通过系统综述迷迭香在食品添加剂中的应用研究,提出以用量、成分配比、不同来源的迷迭香、天然迷迭香结合化学食品添加剂等方面开展新的研究思路,以期实现迷迭香在食品添加剂中的可持续开发应用。Rosmarinus offieinalis a plant in the family Lamiaceae,is rich in chemical components and widely used in the pharmaceutical industry.It has biological activities such as anti-inflammatory,antibacterial,anti-tumor,and antiviral,and is valuable natural resources with homologous food and medicine.Rosmarinus offieinalis is a natural e-number that can be used as antioxidants,preservatives,and antiseptic.Among them,the fat soluble extracts of salvianolic acid and salvianolic acid have good antioxidant activity.Through a systematic review of the application research of Rosmarinus offieinalis in e-number,new research ideas are proposed in terms of dosage,ingredient ratio,different sources of rosemary,natural rosemary combined with chemical E-number,in order to achieve sustainable development and application of Rosmarinus offieinalis in E-number.
