摘 要:葡萄酒挥发性香气是葡萄酒风味的重要组成部分,为探究天山北麓玛纳斯小产区干红葡萄酒的挥发性香气特征,该文采用顶空固相微萃取-气相色谱-质谱联用(headspace solid-phase microextraction-gas chromatography-mass spectrometry,HS-SPME-GC-MS)分别对玛纳斯小产区同一酿造技术生产的3个年份、4个品种共12款干红葡萄酒的挥发性物质组成进行鉴定分析。结果表明,12款干红葡萄酒共鉴定出69种挥发性香气化合物,其中酸类3种、高级醇类18种、醛酮类2种、C 6/C 9醇类6种、酯类11种、乙酯类17种、乙酸酯类8种、降异戊二烯类1种、萜烯类2种以及其他化合物1种,香气活度值(odor activity value,OAV)>1的有23种。采用正交偏最小二乘判别分析方法(orthogonal partial least squares discriminant analysis,OPLS-DA)进行判别模型的建立能够有效区分12款葡萄酒,具有良好的适应性和可预测性。同时通过OPLS-DA结合预测变量重要性预测,筛选出变量投影重要性因子关键化合物33种,进一步进行聚类热图的制作,解析不同品种葡萄酒风味差异特征。该文分析了多品种、多年份干红葡萄酒挥发性香气特征,对了解该产区葡萄酒的葡萄酒风格有一定的参考价值。Volatile aroma of wine is an important component of wine flavor.To investigate the volatile aroma characteristics of dry red wines from Manas region in the northern foothills of Tianshan Mountain,headspace solid-phase microextraction-gas chromatography-mass spectrometry(HS-SPME-GC-MS)was used to characterize the volatile composition of 12 dry red wines of 3 vintages and 4 varieties produced by the same brewing technology in of Manas region was identified and analyzed.Results showed that a total of 69 volatile compounds were identified in the 12 dry red wines,including 3 acids,18 higher alcohols,2 aldehydes and ketones,6 C 6/C 9 alcohols,11 esters,17 ethyl esters,8 acetate esters,1 isoprenoid,2 terpenes,and 1 other compound,and 23 compounds with an odor activity value>1 were detected.The discriminant modelling using orthogonal partial least squares discriminant analysis(OPLS-DA)was able to effectively differentiate the 12 wines,which had good adaptability and predictability.Meanwhile,33 variable projection importance factors key compounds were screened out by OPLS-DA combined with the predicted importance of predictor variables,and the clustering heat map was further performed,explaining the flavor profile of different varietal wines.This paper analyzed the volatile aroma profiles of multi-varietal and multi-vintage dry red wines,which could be useful for understanding the wine styles from this production area.
