摘  要:为探究不同浓度苦瓜多糖—壳聚糖复合膜对鲜切黄瓜保鲜效果及品质的影响,测定其在4℃贮存过程中感官评价、可溶性固形物含量、失重率、总酚等变化情况,探讨不同浓度复合膜的最优配比.结果表明,10 mg/mL苦瓜多糖和0.5%壳聚糖复合膜能保持鲜切黄瓜较好的色泽,延缓丙二醛含量的减少和抗坏血酸含量的下降,由此可见苦瓜多糖-壳聚糖涂膜可有效延长鲜切黄瓜的保质期,该研究可为鲜切黄瓜保鲜提供理论支持.To investigate the effect of different concentrations of bitter gourd polysaccharide-chitosan composite films on the freshness and quality of fresh cut cucumbers,the changes in sensory evaluation,soluble solid content,weight loss rate,total phenols,etc.during storage at 4℃were measured,and the optimal ratio of different concentrations of composite film was explored.The results showed that 10 mg/mL bitter gourd polysaccharide and 0.5% chitosan composite film can maintain the better color of fresh cut cucumbers,delay the decrease of malondialdehyde content and ascorbic acid content.It can be seen that bitter gourd polysaccharide-chitosan coating can effectively extend the shelf life of fresh cut cucumbers.This study can provide theoretical support for the freshness preservation of fresh-cut cucumbers.
