摘  要:研究了蝶豆花青素在不同光照、温度、pH、金属离子、氧化剂、还原剂、防腐剂作用下的稳定性及其在染色米饭中的应用。结果表明:蝶豆花青素在黑暗、低于70℃、酸性、中性及Mg^(2+)、Ca^(2+)、Na+、Zn^(2+)、Fe^(2+)金属离子添加的环境下稳定性均较好;蝶豆花青素随着过氧化氢体积分数的增加而产生愈加明显的消色效果,其稳定性对强还原剂亚硫酸钠比较敏感,但受抗坏血酸的影响不大;苯甲酸钠(质量浓度1 mg/mL)、山梨酸钾(质量浓度1 mg/mL)和蔗糖(质量浓度100 mg/mL)3种防腐剂均对蝶豆花青素影响较小;通过在染色米饭中的应用发现,蝶豆花提取液染色具有较好的色泽稳定性。The stability of anthocyanin extracted from Clitoria ternatea L.under different light,temperature,pH,metal ions,oxidants,reductants,preservatives and its application in dyed rice were studied.The results showed that the stability of Clitoria ternatea L.anthocyanin was relatively stable under the environmental of darkness,below 70℃,acidic or neutral,as well as mental ion additives such as Mg^(2+)、Ca^(2+)、Na~+、Zn^(2+)and Fe^(2+).With the increase of hydrogen peroxide volume fraction,the Clitoria ternatea L.anthocyanin produced more and more obvious achromatic effect,its stability was sensitive to sodium sulphite while had no significant effect on ascorbic acid.Three preservatives,sodium benzoate(1 mg/mL),potassium sorbate(1 mg/mL)and sucrose(100 mg/mL),had little impact on Clitoria ternatea L.anthocyanin.Through the application of dyed rice,it was found that the dyeing of Clitoria ternatea L.extract had a good color stability.
