摘 要:为探究6种漾濞泡核桃休闲食品的功能成分及其体外抗氧化活性,通过脱衣、浸味、烘烤等工艺加工成6种漾濞泡核桃休闲产品,系统分析其脂肪酸组成、内源性抗氧化物质(如α-生育酚、角鲨烯、β-谷甾醇等)及体外抗氧化活性。结果显示:6种漾濞泡核桃产品含有丰富的不饱和脂肪酸,占比超过80%,其中亚油酸含量最高。不同加工方式对核桃产品中的抗氧化物质含量有显著影响,带衣核桃仁的α-生育酚含量最高,而原味烧烤核桃仁的γ-生育酚含量最高。体外抗氧化活性分析显示,带衣核桃仁的总抗氧化能力和自由基清除能力最强。综合评价表明:带衣核桃仁的功能成分含量最为丰富,综合得分最高。研究结果可为开发高附加值的核桃休闲食品提供理论依据。This study aimed to analyze the functional components and in vitro antioxidant activity of six types of Juglans sigillata‘Yangbipaohetao’snack foods.Six walnut snack products were processed through peeling,flavoring,and roasting,and their fatty acid composition,endogenous antioxidant substances(such asα-tocopherol,squalene,β-sitosterol),and in vitro antioxidant activity were systematically analyzed.The results showed that the six J.sigillata‘Yangbipaohetao’products contained abundant unsaturated fatty acids,accounting for over 80%of the total fatty acids,with linoleic acid being the highest.Different processing methods significantly affected the content of antioxidant substances,with the highestα-tocopherol content found in walnut kernels with skin,while the highestγ-tocopherol content was found in roasted walnut kernels.In vitro antioxidant activity analysis revealed that walnut kernels with skin had the strongest total antioxidant capacity and free radical scavenging ability.Comprehensive evaluation indicated that walnut kernels with skin had the richest functional components and the highest comprehensive score.This study provides a theoretical basis for developing high-value-added walnut snack foods.
