摘　　要：随着生活质量的提高,人们愈发重视健康饮食,安全健康的膳食纤维成为消费者广泛关注的焦点。膳食纤维对人体微量元素的吸收、维持血糖平衡与胆固醇稳定至关重要。其中,抗性糊精作为优质水溶性低分子膳食纤维受到了广大消费者的青睐。基于此,本文对抗性糊精的功能性作用及其在食品中的应用进行研究论述,以供参考。With the improvement of the quality of life,people pay more attention to healthy diet,and safe and healthy dietary fiber has become the focus of consumers’attention.Dietary fiber plays an important role in the absorption of trace elements,the maintenance of blood glucose balance and cholesterol stability.Among them,resistant dextrin as high-quality water-soluble low molecular weight dietary fiber has been favored by the majority of consumers.Based on this,the functional role of anti dextrin and its application in food were discussed in this paper for reference.
