摘  要:“百千万工程”是广东省更好地解决城乡区域发展不平衡、不充分问题的重大战略部署,而“粤菜师傅”工程作为其重要实施抓手,通过技能赋能、产业联动与文化传承为县域经济注入内生动力。技工教育作为职业教育的主力军,其课堂教学是人才培养的主渠道、主阵地和主战场,课程改革则是提升技工教育质量的关键要素。基于“百千万工程”和“粤菜师傅”双视域下,本文以汕尾技师学院烹饪专业工学一体化课程教学改革为例,对技工院校烹饪专业教学提质路径进行探索,旨在以高质量教学培育高质量“粤菜师傅”,以人才蓄势赋能助力“百千万工程”。The“Hundred,Thousand and Ten Thousand Project”is a major strategic deployment of Guangdong province to better solve the problem of unbalanced and inadequate development between urban and rural areas,and the“Cantonese Cuisine Master”project,as an important implementation starting point,injects endogenous impetus into the county economy through skill empowerment,industrial linkage and cultural inheritance.As the main force of vocational education,the classroom teaching is the main channel,the main position and the main battlefield of talent training,and the curriculum reform is the key element to improve the quality of the technical education.Based on the dual perspectives of“Hundred,Thousand and Ten Thousand Project”and“Cantonese Chef”,this paper takes the teaching reform of the engineering integration course of culinary major in Shanwei Technical College as an example to explore the path of improving the teaching quality of culinary major in technical colleges,aiming at cultivating high-quality“Cantonese Chef”with high-quality teaching and empowering talents to help the“Hundred,Thousand and Ten Thousand Project”.
