摘 要:利用高效液相色谱荧光法(high performance liquid chromatography fluorescence method,HPLC-FLD)测定山楂、炒山楂和焦山楂中苯并[a]蒽、、苯并[b]荧蒽和苯并[a]芘4种多环芳烃(poly-cyclic aromatic hydrocarbons,PAHs)的含量,并探索炒制工艺对山楂安全质量水平的影响。采用Water-sPAHC18色谱柱,以乙腈-水为流动相,梯度洗脱,流速为1.2 mL/min。结果表明,4种多环芳烃在1.00~100μg/L质量浓度范围内线性良好,相关系数R≥0.9998,加标回收率为84.4%~90.4%,RSD为1.4%~2.3%,检测限为0.21~0.42μg/kg,定量限为0.63~1.26μg/kg;不同山楂制品中多环芳烃含量从大到小的顺序为:焦山楂>炒山楂>山楂。该方法具有操作简便,灵敏度高,准确度高等优点,可以用于山楂制品中4种多环芳烃含量的测定;炒制工艺会增加山楂中多环芳烃的含量。This paper aims to a HPLC-FLD method for the determination of benzo[a]anthracene,chrysene,benzo[b]fluoranthene and benzo[a]pyrene in hawthorn,fried hawthorn and burnt hawthorn,and explore the effect of frying technology on quality and safety level of hawthorn.A WatersPAH C18 column was used for gradient elution with acetonitrile-water as mobile phase at the flow rate of 1.2 mL/min.The results showed that the linear range of the four polycyclic aromatic hydrocarbons were 1.00~100μg/L,the correlation coefficient were 0.9998,the recoveries were 84.4%~90.4%,the RSDs were1.4%~2.3%,and the detection limits were 0.21 to 0.42μg/kg,the limits of quantitation were 0.63μg/kg to 1.26μg/kg.The order of the content of PAHs in different processed hawthorns was:coke hawthorn>fried hawthorn>hawthorn.The method has the advantages of simple operation,high sensitivity and good accuracy,and can be used for the determination of 4 kinds of PAHs in hawthorn products.The frying process increases the content of polycyclic aromatic hydrocarbons in hawthorn.
