摘 要:目的了解赤峰市饲养并销售的白条鸡中五种食源性致病菌的污染分布情况,为食源性疾病预防控制提供依据。方法于2019-2024年,每年在内蒙古自治区赤峰市的东、西、南、北、中部分别设立调查点,采用简单随机抽样方法,在每个方位采集生鲜白条鸡样本。采用细菌培养、生物化学反应和聚合酶链反应(PCR)方法对样品进行检测,确认阳性致病菌株及分型,对检测出的阳性致病菌污染分布情况进行描述性分析,比较每种阳性致病菌的检出率。结果2019-2024年在230只白条鸡样品中共检测到沙门氏菌23株(占10.00%)、致泻大肠埃希菌22株(占9.57%)、空肠弯曲菌29株(占12.61%)、产气荚膜梭菌20株(占8.70%)、小肠结肠炎耶尔森菌1株(占0.43%),产气荚膜梭菌的检出率高于小肠结肠炎耶尔森菌(χ^(2)=18.01,P<0.05)。存在同一只白条鸡样品中发生空肠弯曲菌、沙门氏菌和致泻大肠埃希氏菌三种致病菌污染的情况。结论2019-2024年赤峰市白条鸡中存在五种食源性致病菌不同程度的污染,除小肠结肠炎耶尔森菌外,其余四种食源性致病菌检出率都较高,且致病菌的分布范围较广、寄生方式复杂。在白条鸡中检测出小肠结肠炎耶尔森菌。Objective To investigate the contamination distribution of 5foodborne pathogens in dressed chickens raised and sold in Chifeng city,so as to provide evidence for the prevention and control of foodborne diseases.Methods From 2019to 2024,sampling sites were established annually in the eastern,western,southern,northern,and central areas of Chifeng city,Inner mongolia autonomous region.Fresh dressed chicken samples were collected from each of the 5directional areas using the simple random sampling method.Bacterial culture,biochemical reactions,and polymerase chain reaction(PCR)were employed to detect pathogens,confirm positive pathogenic strains and their serotypes.A descriptive analysis was conducted on the contamination distribution of detected pathogens,and the detection rates of each foodborne pathogen were compared.Results Among 230samples tested from 2019to 2024,23strains of Salmonella(10.00%),22strains of diarrheagenic Escherichia coli(9.57%),29strains of Campylobacter jejuni(12.61%),20strains of Clostridium perfringens(8.70%),and 1strain of Yersinia enterocolitica(0.43%)were identified.The detection rate of Clostridium perfringens was significantly higher than that of Yersinia enterocolitica(χ^(2)=18.01,P<0.05).Instances of co-contamination with Campylobacter jejuni,Salmonella,and diarrheagenic Escherichia coli in single samples were observed.Conclusion From 2019to 2024,dressed chickens in Chifeng city showed varying degrees of contamination with 5foodborne pathogens.With the exception of Yersinia enterocolitica,the detection rates of the other 4pathogens remained relatively high.These pathogens exhibited wide distribution ranges and complex colonization patterns.Yersinia enterocolitica was detected in dressed chickens.
