摘 要:冷冻保藏技术被广泛应用于水产品保鲜,但降温过程中的冰晶形态会对水产品的微观结构造成不可逆转的损伤,从而影响水产品的加工特性与营养品质。磁场辅助冷冻是一种具有调控冰晶成核能力的新型技术,可实现对冷冻过程中冰晶形成和生长的良性控制,有效降低蛋白质变性程度,从而较好地维持水产品原有组织结构及品质。本文对磁场辅助冷冻的作用效果、磁场辅助冷冻技术在水产品领域的应用现状进行了综述,指出目前存在的问题:磁场辅助冷冻的工艺参数有待优化,磁场辅助冷冻的作用机制仍需继续挖掘,磁场辅助冷冻的工业化应用系列问题有待解决。此外,本文对磁场辅助冷冻在水产品领域中的商业化应用进行展望,以期为磁场辅助水产品冷冻后续的研发和应用提供参考。Freezing preservation technology is widely used to preserve aquatic products.Sometimes the processing characteristics and nutritional quality of aquatic products can be significantly affected as the ice crystal morphology during the cooling process causes irreversible damage to the microstructure of aquatic products.Magnetic field-assisted freezing is a new technology with the ability to regulate the nucleation of ice crystals.During this special freezing process,such regulation in the formation and growth of ice crystals can effectively reduce the degree of protein denaturation,helping maintain the original tissue structure and good quality of aquatic products.In this review,we first described the effects of magnetic field-assisted freezing and summarized the applications of magnetic field-assisted freezing technology in the field of aquatic products.Then,we highlighted several common issues to be addresses and further explored,including the optimization of process parameters for magnetic field-assisted freezing,the mechanism of this technology and its potential industrial applications.Finally,we presented the outlook for the commercial application in the field of aquatic products.This review will provide a reference for the subsequent research and development of magnetic field-assisted freezing technology,as well as its application in the preservation of aquatic products.
