5种调味品精油中桉树脑含量的比较分析

摘  要:为了比较分析山萘、小茴香、生姜、良姜、香叶5种调味品精油中桉树脑含量,采用水蒸气蒸馏法提取5种调味品中精油,用气相色谱-质谱法分析鉴定5种调味品精油中的化学成分,结果表明:山萘精油分离并鉴定出32种化合物,其中桉树脑的面积百分含量为3.14%;小茴香精油分离并鉴定出35种化合物,其中桉树脑的面积百分含量为15.74%;生姜精油分离并鉴定出22种化合物,其中桉树脑的面积百分含量为16.57%;良姜精油分离并鉴定出26种化合物,其中桉树脑的面积百分含量为18.05%;香叶精油分离并鉴定出20种化合物,其中桉树脑的面积百分含量为54.07%.采用气相色谱法定量分析5种调味品精油中桉树脑的含量,结果表明:山萘、小茴香、生姜、良姜、香叶中桉树脑的含量分别为0.7343、1.0052、1.6911、2.3393、13.4468 mg/100 g.The content of eucalyptol in the essential oils of five spices,namely mountain pepper,fennel galangal,ginger and thyme were compared and analyzed.5 kinds of essential oils from condiments were extracted by steam distillation and the chemical components were analyzed and identified by gas chromatography-mass spectrometry.The results showed that 32 compounds were separated and identified in the essential oil of mountain pepper with eucalyptol accounting for 3.14%of the total area;35 compounds were separated and identified in the essential oil of fennel with eucalyptol accounting for 15.74%of the total area;22 compounds were separated and identified in the oil of ginger with eucalyptol accounting for 16.57%of the total area;26 compounds were separated and identified the essential oil of galangal with eucalyptol accounting for 18.05%of the total area and 20 compounds were separated and identified in the essential oil of thyme with eucalyptol accounting for 54.07%of the total area.Content of eucalyptol in the essential oils of the five spices was quantitatively analyzed by gas chromatography.The results showed that the content of eucalyptol in mountain pepper,fennel,galangal,ginger and thyme were 0.7343,1.0052,1.6911,2.3393,13.4468 mg/100 g,respectively.
