预制菜食品安全监管现状及风险防控策略研究

摘  要:预制菜作为一种便捷的预加工食品,近年来在快节奏生活方式的推动下迅速发展。然而,其食品安全监管面临法规标准不完善、监管技术落后、消费者参与度低等挑战。本文分析了预制菜从生产到储运各环节的食品安全风险,提出了健全法规标准、强化企业自律、提升消费者参与度等风险防控策略。通过细化分类管理、推动智慧监管、加强跨部门协作,以及推广新兴保鲜技术,为提升预制菜食品安全监管效能提供参考,促进行业健康发展。Pre-prepared dishes,as a convenient pre-processed food,have rapidly developed in recent years driven by fast-paced lifestyles.However,food safety supervision faces challenges such as incomplete regulations,outdated regulatory technologies,and low consumer participation.This paper analyzes the food safety risks in various stages from production to storage and transportation,and proposes risk prevention strategies including improving regulations,strengthening corporate self-discipline,and enhancing consumer engagement.By refining classification management,promoting smart supervision,enhancing inter-departmental collaboration,and adopting new preservation technologies,this paper aims to provide references for improving the efficiency of food safety supervision and promoting the healthy development of the industry.
