摘　　要：本研究为评估快速测试片法用于粮食制品中霉菌和酵母菌48 h快速检测的可行性,依据国际标准ISO 16140-2:2016,以《食品安全国家标准食品微生物学检验霉菌和酵母菌计数》(GB 4789.15—2016)第一法为参考方法,对测试片法与GB 4789.15—2016在粮食制品样品检测上的一致性指标进行验证。结果表明,霉菌酵母菌测试片法在相对正确度和准确度方面均符合ISO 16140-2:2016对于方法等效性的要求,可以用于粮食制品中的霉菌和酵母菌的快速检测。This study aims to evaluate the feasibility of using rapid test strip method for 48 h rapid detection of mold and yeast in grain products,according to the international standard ISO 16140-2:2016,the first method of GB 4789.15—2016 was used as the reference method,and the consistency indexes with the reference method were verified.The results show that all parameters meet the requirements of ISO 16140-2:2016,the method can be used for rapid detection of yeast and mold in grain products.
